Cheesy Sweet Potato Casserole

If you are looking for one of the easiest sides to make this holiday season, this sweet potato casserole is calling your name. With only a few ingredients, these are the perfect amount of sweet, salty, and gooey cheese! I was able to purchase raw milk and sweet potatoes from my local farmers markets as well, so not only is this dish delicious, but the perfect way to utilize products from my local vendors!

  • Synergos Farms is a thriving healthy farm community, synergistically growing food, allowing all things to grow naturally. Located in Santa Fe, Texas, Synergos focuses on regenerative practices that support healthy soil, plants, and animals.

  • Wood Duck is an 87 acre farm, located in Cleveland, Texas. They have a thriving CSA program and have been providing healthy produce to the community for years.   • Plant it Forward works with independent, professional farmers with refugee backgrounds to grow and distribute fresh produce throughout the community. At our market locations we work with farmer Materanya “Pierre” Ruchinagiza, who is originally from the Democratic Republic of Congo. Each market he brings delicious vegetables and good conversation. He’s an amazing asset to the markets and his farming knowledge is invaluable!

  • Animal Farm is a working, sustainable permaculture center located 65 miles west of Houston. They are dedicated to producing high quality certified organic vegetables and flowers. They sell at our markets, but also have a wonderful CSA program!

  • Verde Greens located in Houston, Texas, uses a combination of hydroponic and no-till soil cultivation methods to produce healthy, nutritious, pesticide- and herbicide-free leafy greens, herbs, and mixed vegetables for the community.

  • Sweetwater Farms HTX is a family-owned, urban farm located in Houston, Texas. They are 7 minutes from the loop in the middle of a food desert. It sits on 6 acres of land and is primarily used to teach inner city youth about agriculture through its partnership with TWEF. We grow some of the freshest seasonal veggies! Ingredients

Recipe is measured for an 8x8 casserole dish

*indicates ingredients were purchased from one of our farmers marker vendors

*3 medium sweet potatoes (choose narrowers potatoes if possible)

*1 ½ cups raw milk. You want to use a milk with a high fat content so raw milk, buttermilk, whipping cream etc. If you don’t consume milk, you can use unsweetened almond or coconut milk.

Chilis in adobo sauce (3 chilis and 1 tsp of the sauce). Add more peppers for a spicier dish

1 block of Gruyère cheese

Method

  1. Preheat oven to 450 degrees

  2. Cut  sweet potatoes into ¼ inch slices

  3. Place the rounds in the dish, slightly overlapping eachother (think fallen dominoes)

  4. In high speed blender, add the milk and chipotle peppers. Blend for about 30-60 seconds until frothy

  5. Pour the milk mixture over the potatoes, coating them evenly

  6. Placed into oven for up to 25 minutes (keep your eye on them to make sure they don’t dry out)

  7. Remove the dish from the oven, and grate the block of gruyere cheese over the dish until there is a thin layer of cheese over every section

  8. Reduce oven heat to 375 and bake the casserole until the cheese in golden brown. Remove from oven and serve warm!

  9. The dish should not be watery. If there is any excess liquid in your casserole dish, you can gently tip the dish sideways over a trashcan or sink to pour off the liquid.
