Radish & Turnip Tartine with Green Butter
There is nothing more satisfying that being able to use the entirety of my purchased fruits and vegetables. I find that many people purchase beautiful vegetables from the market with the greens still attached, and often don’t know what to do with the leftover tops. This recipe is a fantastic combination crispy, spring root vegetables and their earthy greens mixed with creamy butter. Farmers market vendors are brimming with these in season radishes and turnips, so take advantage while you can!

Ingredients
8-10 mixed radishes, e.g., easter egg, watermelon, and purple ninja.
2 Japanese turnips with their tops
1/2 cup unsalted butter at room temperature
1 lemon (1 tsp. lemon zest and wedges for serving)
Sea salt to taste
Black pepper to taste
1 grated garlic clove
6-10 thick toasted bread slices
Red pepper flakes for garnish
Method
Remove the tops from the Japanese turnips, and radishes, wash and pat dry.
Remove any thick stems and gather a packed 1 cup of the mixed greens.
Use a mandoline to very thinly slice the radishes and turnips. Then place the slices in a bowl filled with ice water and let sit for 10 min.
While the radishes and turnips sit, place the cup of greens, butter, lemon zest, salt, black pepper, and garlic in a food processor. Blend until the butter is green and smooth, scraping the sides periodically.
Remove the radishes and turnips from the ice water and pat dry.
Spread the butter over the toast pieces and top with the radishes and turnips. Top with salt, black pepper, and crushed red pepper.
