With a new year here, new goals have taken shape. I am excited to get back to my blogging days to provide you all with easy, locally-sourced recipes using ingredients that can be found at both the Heights Mercantile and Rice Village Farmers Markets. For those of you that are new here, years ago The Informal Grub was just a young Instagram account where I highlighted recipes paired with interesting nutritional factoids - informing you on grub, hence the name. I have not put out a blog post in over two years but with these new goals, I am determined to get back to it.

These farmers markets are filled with healing foods, hidden gems and so much to highlight! My hope is that as you read these recipes, get a visual of what all the markets have to offer while learning about these amazing and hardworking small businesses that help this community thrive!

What better way to kick off this series than a recipe to celebrate Valentine’s Day and the beginning of strawberry season!

Waffles are a great way to use seasonal produce because you can top them with whatever you like. In this recipe I’ve used waffle mix from Jani’s Waffles, fresh strawberries from Wood Duck Farm, salted honey from Bee2Bee Honey Collective, and paired it with wonderful coffee from District Roasters.

Jani’s makes and sells multiple flavors of gluten-free, plant-based waffle and pancake mixes, as well as vegan granola mixes. Bee2Bee provides beekeeping services and hyper local Houston honey. They sell batches of honey separated by the neighborhoods the hives are located in, as well as infusions, and beehive products. Wood Duck is an 87 acre farm, located in Cleveland, Texas. They have a thriving CSA program and have been providing healthy produce to the community for years. Prepared heart-shaped waffles with strawberries and honey

Ingredients

1 1/2 cups Jani’s waffle mix

1 1/2 cups water or any kind of milk

1 tbsp coconut oil (optional)

1 cup strawberries or other seasonal fruit

As much local honey as you want to top

Method

  1. Begin heating up your waffle iron.

  2. Combine waffle mix, water (or milk), and coconut oil in a mixing bowl. Let the waffle mix sit until it thickens.

  3. Lightly grease your waffle iron with coconut oil or grass-fed butter.

  4. Using a small measuring cup, scoop your waffle batter into the iron and close. Each waffle iron is different so expect to have some trial runs before you find the right amount of batter and cook time.

  5. Once your waffles are done, set them on a plate while you prepare the toppings.

  6. Slice the strawberries into quarter pieces and sprinkle over the waffles.

  7. If you don’t have a honey spoon, just take any spoon you have and drizzle the honey over the top of the waffles and strawberries. Now they are ready to serve!

Both markets run from 9-1 pm, with Heights located at 714 Yale St. and Rice located at 2504 Amherst St. These markets operate rain or shine! We will have over 60 vendors, live music, and immaculate vibes.
